Day 1: Yellow Curry With Ricenoodles

Yellow curry with ricenoodles

The first day of the 30 day vegan challenge. We will start with a yellow curry with rice noodles. This dish is very easy to make and can be put on the table in 30 minutes. This type of yellow curry originates from Thailand, but the version you see here is made with ingredients that are easy to get in the Netherlands and therefore not very Thai. It tastes good nonetheless!

Ingredients:

For 2-3 portions

  • 2 Portions of rice noodles
  • 1 Bell pepper
  • 200 Gram green beans
  • 140 Gram sweetcorn can
  • 140 Gram pineapple can
  • 200ml Coconut milk
  • 3tbs Thai yellow curry paste
  • Some peanuts

How to make the curry:

  • First, cut the bell pepper into small pieces.
  • Heat some oil in a large frying pan or wok and add the bell pepper and green beans. Let it fry for 5 minutes on medium heat.
  • Next, add the sweetcorn and pineapple with the juice that’s inside the can. You can let it cook for a few moments or continue to the next step.
  • The next step is to add the Thai yellow curry paste. Add 3 tablespoons and mix it in nicely. If you cannot get yellow curry paste and need to use red curry paste add 1 tablespoon.
  • Add the coconut milk, stir through and let it cook for 20-25 minutes on low heat.
  • Add the rice noodles together with 200ml of water. Wait until they start to absorb water and soften up. Turn them around to let the other side soften as well. Wait until all the noodles get soft. Now the curry is ready.
  • Serve the curry with the peanuts
  • Enjoy!
